    Quinoa Pudding Recipe

    Quinoa pudding can be served as a breakfast, dessert, or snack, and is perfect for those who enjoy healthy eating.

    Ingredients:

    • Quinoa: 1/2 cup
    • Coconut milk or regular milk: 2 cups
    • Vanilla extract: 1 teaspoon
    • Honey or maple syrup: 2-3 tablespoons (adjust to taste)
    • Cinnamon powder: 1/2 teaspoon (optional)
    • Salt: a pinch
    • Fresh fruits, nuts, or dried fruits (for garnish)

    Preparation Time:

    The total time is approximately 30-40 minutes, including 15-20 minutes for cooking the quinoa and at least 1 hour for chilling (adjust chilling time according to personal preference).

    Steps: 

    Rinse the Quinoa:

    • Rinse the quinoa several times with water to remove the bitter coating on the surface.

    Cook the Quinoa:

    • Combine the rinsed quinoa with 2 cups of coconut milk or regular milk in a pot, and add a pinch of salt. Bring it to a boil over medium heat.
    • Once boiling, reduce the heat to low, cover the pot, and cook for about 15 minutes until the quinoa is soft and has absorbed most of the liquid.

    Add Sweeteners and Spices:

    • Stir in the honey or maple syrup, vanilla extract, and cinnamon powder into the cooked quinoa. Continue to cook on low heat for an additional 5 minutes to blend the flavors.

    Cool Down:

    • Pour the cooked quinoa mixture into a bowl and let it cool to room temperature. Then, refrigerate for at least 1 hour until the pudding is chilled and set.

    Garnish and Serve:

    • Take the pudding out of the refrigerator, garnish with fresh fruits, nuts, or dried fruits, and enjoy.
