    Ingredients

    Turkey (approximately 4-5 kg)
    Unsalted butter (about 120g)
    Salt (2 tablespoons)
    Ground black pepper (1 tablespoon)
    Minced garlic (4 cloves)
    Onions (2, chopped)
    Carrots (2, chopped)
    Celery (2 stalks, chopped)
    Lemon (1, halved)
    Fresh herbs (such as thyme, rosemary, parsley, about a handful)
    Chicken broth (about 500 ml)

    Instructions

     

    1. Prepare the Turkey: Take the turkey out of the refrigerator and let it sit at room temperature for 30 minutes. Rinse the inside and outside of the turkey with cold water, then pat it dry with paper towels. Sprinkle salt and black pepper evenly inside and outside the turkey.

     

    2. Make the Butter Mixture: In a small bowl, mix the softened butter, minced garlic, and chopped fresh herbs.

     

    3. Apply the Butter Mixture: Carefully lift the skin of the turkey and spread the butter mixture evenly over the breast and leg meat. Then, rub another layer of the butter mixture over the surface of the turkey.

     

    4. Stuff the Turkey: Stuff the cavity of the turkey with the lemon, onion, carrot, celery chunks, and a few sprigs of herbs to add flavor.

     

    5. Roast the Turkey: Place the turkey breast side up in a roasting pan, tucking the wings under the bird. Place the roasting pan in an oven preheated to 220°C (425°F) and roast for 20 minutes to brown the surface.

     

    6. Lower the Temperature and Continue Roasting: Reduce the oven temperature to 180°C (350°F) and continue roasting for about 2.5-3 hours. Every 30 minutes, you can baste the turkey with chicken broth or its own juices to keep it moist.

     

    7. Check the Turkey's Doneness: Insert a meat thermometer into the thickest part of the turkey's thigh. The turkey is done when the internal temperature reaches 75°C (165°F).

     

    8. Let the Turkey Rest: Remove the turkey from the oven, cover it with aluminum foil, and let it rest for 20 minutes to allow the juices to redistribute.

     

    9. Slice and Serve: Carve the turkey and serve it with your favorite sides like mashed potatoes, cranberry sauce, green beans, etc.
